Fruit Leather

FRUIT: 2 quarts strawberries, honey from our friend Tom’s beehives
SOURCE: farmer’s market on 06/05/2009
COST: $8.00
RECIPE: puree strawberries to make 2 cups puree, mix in 2 T honey and 1 T lemon juice, spread thin on a cookie sheet and dry in the oven overnight (1 quart whole strawberries makes about 2 c. puree which ends up being enough for 1.5 cookie sheets so we made a double batch)
YIELD: 18 rolled strips
TASTE: yummy, I think next time they could use more honey
