Pickled Garlic

I’m really excited about the potential for these pickles. I don’t have the greatest track record with pickles though — they always turn out too vinegary — but I’m hoping for a turnaround. Because really, garlic pickles? I have a feeling if they’re good they are going to be really good. Made as part of the can jam for March.

Pickled Garlic

DATE: 03/19/2010
FRUIT: about 4.5 pounds of peeled garlic cloves
SOURCE: Costco
COST: $7.50
RECIPE: from the fantastic book Putting Up

put 1/2 teaspoon celery seed in each jar
blanch the garlic for 1 minute
pack the jars with the blanched garlic
bring 6 cups white vinegar to a boil
stir in 2 cups sugar, 2 tablespoons crushed red pepper, 1.5 tablespoons salt
pour boiling solution over garlic, leaving appropriate headspace
process in a hot-water bath for 10 minutes

YIELD: 9 three-quarter-pints
TASTE: we’ll see when everything is all pickle-y
