Blackberry Syrup

I had three pints of blackberries turning to mush in the fridge and I figured I better do something with them and soon. I have another six pints to turn into jam so that was out and they were too far gone to freeze. I asked Stefan, how about syrup, like for pancakes? He replied that blackberry flavored sugar-water seemed like it would be good over flapjacks. So romantic…

Blackberry Syrup Turned Jelly

DATE: 07/26/2010
FRUIT: 3 pints of blackberries that had to be seriously picked over, maybe 2 pints fruit was good
SOURCE: blackberries from a local farm at the farmers market
COST: $10
RECIPE: from Fine Cooking although I added about 2 T lemon juice to my 1.5 c juice and the teeniest bit of pectin
YIELD: 1 half-pints, and about a quarter-pint in the fridge
TASTE: delicious but it turns out the pectin was completely unnecessary as the syrup set up to very stiff jelly, oh well, we can melt it for pancakes or use it as a jelly, it still tastes really good
