Apricot Jam

Half-Bushel

FRUIT: 6 cups chopped apricots
SOURCE: farmers market
COST: hard to know but probably about $10
RECIPE:

mix 6 c chopped apricots, 6 Tablespoons lemon juice, 2 Tablespoons calcium water in a large pot and bring to a boil
in the meantime combine 3 c sugar and 4.5 teaspoons pomona pectin in a bowl
after the apricots are boiling, add the sugar mixture and stir to dissolve
return to a boil and boil for 1 minute
ladle hot into hot jars and process for 10 minutes

YIELD: 8 half-pints and a little for licking out of the pot
TASTE: so good
