I’m thinking of calling it Confiture de Fraises a la Menthe though I’m not sure how well that would fit on the label. I made it two years ago, then didn’t make it last year and wished I did. Something about that little minty taste gives this jam a great finish. I fully admit I’m doing what I always do during strawberry season and go crazy buying flats and flats of berries because there is fresh fruit at the farmer’s market. I say, recognize these traits in yourself and go with it.
FRUIT: about 3 quarts strawberries

RECIPE: plain old strawberry jam with about 20 mint leaves chopped and added to the batch
YIELD: 9 half-pints
